To me they sound both grammatically correct. I usually use previous in such instances, but I heard also prior used fairly often.

Any specific instance in which using one instead of another is preferable?

My cursory and tentative understanding is that prior seems to imply some kind of hierarchy of importance (ie. doctors appointment vs hanging out at the mall), while previous seems to imply something scheduled before a specific even, but not necessarily more important.

Prior does not indicate any kind of priority; it just means that it happened earlier in time. Prior and previous are synonyms in this context.

I had a little think about this, and I feel slightly uncomfortable using previous for a future event.

So Im happy to sayI could not make it because of prior/previous engagements.

But I prefer I cant make it because of prior engagements when talking about up-coming events.

Due to a previous commitment, next Tuesday I will stay with you at school only till 11.15.
